Would 14 grams of protein per serving with no off-taste and a pleasant bread crumb make you think differently about soy ingredients? How about making this loaf in a counter-top bread machine?
Here is the recipe that I modified from the original recipe developed by Rachel Carlson of the Northern Crops Institute. I used a Regal Kitchen Pro bread machine to bake this loaf.
Ingredients:
All Purpose Flour – 350 g
Soy Flour – 150 g
Yeast – 13 g
Shortening – 30 g
Salt – 10 g
Sugar – 40 g
Dry Milk Powder – 10 g
Water (cool) – 370 g
Add water to the bottom of the bread machine baking pan. Melt shortening and add to water. Add dry ingredients (except yeast) in a large bowl and mix. When thoroughly mixed, add to the machine baking pan. Add yeast on top of dry ingredients.
Bake using Dark White or Light White setting on machine depending on the brownness of the crust desired.
Update (April 11, 2024): Bake using Quick Bread settings to get a light and airy loaf. Same great taste and texture.
Slice and serve.
